Welcome to Easy Curry Recipes
Hi. My name is Ian, and I have been enjoying Indian curries for over 60 years. The first curry I can remember eating was back when I was about 9 years old - and I loved it. This a collection of my curry recipes. All of them are very easy, and most of them will only take about 30 minutes to cook.
When my Mum used to make a curry it was always something of a special occasion, with lots of little side dishes to go with it. She always made a Ceylon curry which is made using coconut milk.
We only ever had plain boiled rice, never Pilau rice, but there would usually be a Dahl dish, boiled eggs, sliced bananas, tomato and onion, roasted peanuts, and always a coconut sambal. I absolutely loved the sambal (not to everyone’s taste) and if there was any of it left over I would sometimes have it in a sandwich the following day! That’s if my Mum hadn’t finished it off herself!
My grandfather was a railway engineer who worked in Ceylon (now Sri Lanka) and my mother was born there. They lived in Columbo and my mother was about 12 when they all moved back to England. I don't know how authentic her curry recipe was - she must have learnt it from her mother after they came back. She never used garlic and ginger paste, but that may be because my father was allergic to garlic.
It was nearly always a beef curry, and that is what I always used when I started cooking curries 30 odd years ago using her recipe.
